Instead of "Je joue au football", would it be acceptable to say "Je fais du football" since it's a regular activity?

You're right that "je fais du football" is correct. Thanks to you, it has now been added to the list of options.
However, remember that "faire de + [sport]" is mainly used to refer to organised activities.

It really is a matter of context.
The way to think about "playing", be it a game or an instrument; is to think in English.
You play at a game but from an instrument then apply this to the French grammar.
However, have a look at the following lesson -- I think that it will help.

My thinking was that the "tous les jours" means the focus is on what you do *each* day. Which is just "jouer au football" one time.
In English you wouldn't say "I play football regularly every day": that would be redundant. "Je fais du football tous les jours" would be the same, I think.
