I am having difficulty with this

I am having difficulty in understanding some of the rules around "depuis que". For example, the sentence "Depuis je te l'ai recontré, je me sense mieux" means in English "Since I have met you, I've been in love with you". Please explain why It isn't "Since I met you". Thanks.

What about sentences that end with "non."In this context, is a sentence that ends with "non" (like "Tu as faim, non ?") considered a positive or negative question? I am guessing it is positive, and that an affirmative answer would be made with "oui" instead of "si."

Imparfait vs. Passé composéI have having problems figuring out when I need to use imparfait in my conversations. For example, I understand that imparfait is used when expressing a thought that took place in the past. So does that mean every thought that I had in the past is put into imparfait?
