Usage of "en tant que"

"Oui, je suis americain d'origine, mais en tant que vampire je n'ai pas de pays."

Could you discuss the usage of "en tant que" please? Is there a lesson related to this subject? From the context it is easy to discern the meaning, but I would like to learn more about the correct usage of this phrase and any other related phrases.

dernière semaine ou semaine dernière?

Hi! In the following question related to this lesson, why the word "dernière" is after the word "semaine", but the same does not apply with "dernier jour"?

He arrived the last day of last week. : Il est arrivé le dernier jour de la semaine ___.

Using le, la, les, du, de la, de, des I've read through the relevant lessons, but I'm still not clear on a few points: If want to say "He likes cheese" do I say "Il aime le fromage" ? What about the negative: "He doesn't like cheese" is it "Il n'aime pas le fromage" ? Why is "I adore cucumbers" "J'adore les concombres" but "I eat apples" "je mange des pommes" ? What about with "avoir peur" is it "il a peur des chiens" ? In the negative would it be "il n'a pas peur de chien". ?
