Why do you say "Nous mangeons de l'agneau" instead of "Nous mangeons d'agneau"? I thought lamb was masculin.

Take a look at the following lesson, which will answer your question,
Du/de la/de l'/des = Some/any (French Partitive Articles)
'de' on its own is a preposition meaning of/from.
