Why isn't merveilleuse accepted? My dictionary gave it as an option.

Thank you for your feedback! "Merveilleuse" has now been added to the correct options. However, as Chris explained, sometimes there are many options (some of them with different connotations) and we cannot add all of them.

My research suggests that excellente, extraordinaire, étonnante or fabuleuse would be possibly more apt than merveilleuse in the context of the exercise.

Yes, I think merveilleuse is an acceptable option in this sentence:

J'ai dégusté une crème brûlée merveilleuse avec un verre de vin blanc.

But there are so many other options that it's immpossible to check for each and every one of them. And they all have slightly different connotations.
