Bonjour Isaac,
You wouldn't use 'taux' on its own; you could say 'taux journalier', but it wouldn't be the first thing that French people would say.
'Taux' typically refers to rates in financial, statistical, or technical contexts -
taux d'inflation = inflation rate
taux d'intérêt = interest rate
taux de change = exchange rate
When rate equals price in English, you will use -
tarif, prix, coût
