You could indeed put 'ensemble' before 'à la plage' but in I think it sits better at the end of the final sentence, no other reason just as 'together' could be before 'to the beach' but is placed at the end.

Not sure, but I suspect because aller as an intransitive verb, needs the preposition à immediately after and before the object "la plage".
I understand your point given that "ensemble" is seen as an adverb modifying aller but this is my take on the reason -- let's see what the other contributors may add.

The placement of adverbs is sometimes a matter of choice and convention, just as in English. Compare these two sentences:
We go to the beach together -- This is the standard way of saying it.
We go together to the beach. -- This sounds a bit unusual but not grammatically wrong.
