I notice all the examples in this section refer to "ne pas". Can other negatives like rien and jamais be used?

Yes, that's possible:
Je promets de ne plus toucher ce couteau. -- I promise not to touch this knife anymore.
Il dit de ne jamais avoir vu cette personne. -- He says never having seen this person.

Il m'a demandé de ne rien dire = He asked me not to say anything
