Hi Erumu,
"What a beautiful day we had!" --> We had a beautiful day. Subject "we", verb "had", object "day"
French "Quelle belle journée nous avons passée" -- Why? The direct object "journée" now appears before the verb and the past participle of passer with avoir has to agree, therefore "passée"; there is no requirement for "que" in this construction.
