What the meaning of Dish fumé??? It's really strange, the dish don't smoke... ahahhaha

Maybe not, but the dish with “saumon fumé” I ate last night was delicious.  Fumé here is the past participle as adjective. Salé, épicé and grillé also are on the list, in the same form.
