Why can't it be "aux fêtes" since the sentence is "at parties"?

This is an excellent point! You could use “aux fêtes” if you were to follow with more details.

C’est un succès aux fêtes de fin d’année = it is a success at the end of year celebrations.

C’est un succès aux fêtes de village = it is a success at village fairs.
