why in french do you not write the 10th (10e) for dates?

"the 10th of September" ? _____ - i get this wrong every time because i have learned that 1st, 2nd, 3rd,= 1e, 2e, 3e....

So why is it that 1e, 2e, 3e, is only used for ranks / positions and never for dates.. (except 1st/ 1e i think?)

Most of the time the "why" question doesn't have an answer. Languages are not math and logic applies within limits. That's just the way things are.
