How would one say ‘This week, I work from Tuesday to Thursday?’ (an exception). Would this be any different from how you would say that in general ‘I work from Tuesdays to Thursdays’? Thanks

Bonjour M,
It would not be different. The only clue that would indicate a difference is "this week" along with "Tuesday to Thursday" (singular form).
Cette semaine, je travaille du mardi au jeudi = This week, I work from Tuesday to Thursday
Je travaille du mardi au jeudi = I work from Tuesdays to Thursdays
