Speaking to friends, would it not be correct to say: 'Dépêche-toi', rather than 'Dépêchez-vous'?

Tim, not if it is to 'friends'. Vous is the only option if it is plural. Tu, te and toi are always singular.
Speaking to a (one) friend, it would be 'Dépêche-toi'. (Vous can be singular, but very, very unlikely to be used in this context as such !)
