So many questions

Question

Although this wasn't an advanced exercise, I found it somewhat challenging and learned some new phrases, (such as "casser votre tirelire; au fil des annees; and s'enticher de).

But, I have some questions:

Why not "a ete etabli..." for "a ete fondu..."?

"Beaucoup d'artistes mondialement connus sont restes..." for " De nombreux artistes de renommees mondiale ont sejourne..."?

"...Ernest Hemingway est devenu enchante par..." for "s'etait entiche de, etc...."?

"et le bar du Ritz porte maintenant son nom" for "et le bar du Ritz porte aujourd'hui son nom"? (which actually translates to "and the Ritz bar carries his name 'today'" or "is 'today' named after him").

And, for "the fairy-tale like hotel, why not, "un hotel qui ressemble a un conte de fees"?

Thank you for this extensive list of questions ;-) It has been interesting researching all of this.
1. Why not "a ete etabli..." for "a ete fondu..."? 
"Établir" may be used if you refer to introducing something new whilst "fonder" is used for "to found / to establish" something new
Ce nouvel impôt va être établi cet été = This new tax is going to be introduced this year
2. "Beaucoup d'artistes mondialement connus sont restes..." for " De nombreux artistes de renommees mondiale ont sejourne..."?
"mondialement connus" is not correct as it's a sort of "tournure anglaise" ;-) : "connus mondialement" is better. However, you will see "connus/célèbres dans le monde entier" or "de renommée mondiale" written and said. 
"sont restés" sounds as if the person is staying put for a certain period of time. I'll check with my colleagues though - await a further reply here
3. "...Ernest Hemingway est devenu enchante par..." for "s'etait entiche de, etc...."?
"est devenu enchanté" sounds as if someone is "bewitched" rather than "enamoured" (i.e être entiché)
4. "et le bar du Ritz porte maintenant son nom" for "et le bar du Ritz porte aujourd'hui son nom"
In this context, maintenant = now / right now (so it sounds a bit too much like a "tournure anglaise" ;-) )  whilst aujourd'hui = nowadays / these days
The translaion given above is slightly too literal I'm afraid. The sentence written in English was "so much so that the Ritz bar is now named after him" ;-)
5. "the fairy-tale like hotel, why not, "un hotel qui ressemble a un conte de fees"
Grammatically, it is ok but in reality, this is not how or what you say or write. It sounds very odd to my native ears ;-)
