Could "elle s'y est installée" be used to translate "she moved there"?

Chris is correct although, in this context, it is a correct alternative and many French native speakers would use "s'installer quelque part" to mean "to move somewhere". It has now been added as a correct option.

Not really. Elle s'y est installée means "She settled there". Close but not quite right.
