What is the meaning of ‘en’ in this sentence: “pour en récupérer le fromage fondu” ?

The whole sentence is:"C'est un gros fromage sous un fil chauffant, que l'on racle à tour de rôle dans nos assiettes pour en récupérer le fromage fondu."I think that en is used to indicate de nos assiettes ("récupérer le fromage fondu de nos assiettes").
