Actually, depending on context, both could be correct.
"Nous ne mangeons pas de lapereau.", you mean "I don't eat young rabbit." in a general manner, like "I don't eat that kind of meat"; whereas "Nous ne mangeons pas de lapereaux." is more specific, "We don't eat young rabbits.".
