The lesson says to use "il a les yeux bleus" but the test says "Il avait les yeux noisettes", as wrong. I am not sure what is the exception even though I am learning a language of exceptions

Les yeux bleus -- blue eyes
Les yeux noisette -- hazel eyes.
The important part to notice is that those color adjectives that are named after a real object (e.g., orange, noisette, abricot, saumon, etc.) remain unaltered. That's why there is no -s in noisette.

Seems to me simply the difference between blue eyes and hazel eyes.
Perhaps I'm not fully understanding your point?
