Why is this correct? Isn't "quel, quelle etc." only for things? and while Les filles à qui je pense sont géniales is correct is there a difference in meaning between the two?

You can say either, there's no difference in meaning.
Les filles à qui je pense or Les filles auxquelles je pense.
The version with à qui is, however, only possible with people and not with inanimate objects. It also sounds a bit more formal.
