Why is it 'conquérir le reste de la Gaule' but then just 'les peuples de Gaule'. I think I've seen the same thing with France in sentences - sometimes 'la France', sometimes just 'France'.

Bonjour Tom,
‘le reste de + definite article + noun’ indicates a quantity. So you have to use the partitive article here.
Il a conquit le reste du pays = he conquered the rest of the country
Il a conquit le reste de la France = he conquered the rest of France
(France is made a countable item here with ‘le reste de’)
‘Le peuple de + country’ doesn’t include an article because it doesn't indicate a quantity and the country is considered as an entity that you cannot count. And it also reflects more on the origin, aka from… / coming from...
Le peuple de France = the French people
L’Histoire de France = French history
